ABSTRACT
A mathematical model was developed in order to predict the main variables involved in potato osmo-dehydration process. The model consider the effects of shrinkage, the variation of apparent diffusion coefficients and osmotic solution properties. The initial conditions of the main process variables needed to solve the corresponding differential equations were obtained from the literature. A numerical algorithm was developed for solving these equations. The validity of the model was demonstrated using the experimental data from the literature and the satisfactory agreement was found between the experimental data and the model predictions.
