Biochemical Analysis of Different Brands of Unifloral Honey Available at the Northern Region of Bangladesh

The research work was conducted to investigate the biochemical composition of five different brands of unifloral honey. The honey from Litchi (Litchi chinensis), Kadom (Anthocephalus cadmba), Til (Sesamum indicum), Plum (Zizyphus mauritiana) and Mustard (Brassica campestris) were used. This paper includes, determination of pH, specific gravity, solubility, moisture content as well as the total and reducing sugar, total protein content, water soluble protein, lipid, ash, dry matter, vitamin A and C and mineral content. It was found that the total content of sugar 77.7-80.30%, reducing sugar 62.30-65.02%, protein 0.30-0.33%, lipid 134-146mg 100 gm-1, vitamin-C 4.8-5.3mg 100 gm-1, pH 3.30 to 4.20, ash 0.65 to 0.80 and specific gravity between 1.33 to 1.36.
