The Potentials of Roots and Tubers as Weaning Foods

Abstract: Any growing plant that stores edible material in subterranea root, corn or tuber is generally referred to as roots and tubers. Roots and tubers form a major staple food group in most developing countries of Africa, Asia and Latin America. Roots and tubers generally are poor sources of some major nutrients but on of the cheapest sources of dietary energy in the form of carbohydrates in developing countries. Thus, they are potential crops for the formulation of adequate weaning foods. This paper discusses therefore the possibilities of developing weaning foods of high nutritive value from roots and tubers.
