Sucrose as a Crosslinking Modifier for the Preparation of Calcium Alginate Films via External Gelation

Abstract: This study introduces a simple technique for the preparation of calcium alginate film via external gelation with the aid of sucrose as a crosslinking modifier. A range of 1 to 5 % w/v of sucrose was mixed with sodium alginate and dried to form a dry film. The sodium alginate film was crosslinked with calcium ions through the addition of CaCl2 solution. The characteristic of the produced calcium alginate film was further studied in terms of surface roughness, chemical and physical properties. Water absorption property and sodium ion permeation ability studies were conducted in order to evaluate film porosity. Results indicated clearly the ability of sucrose to modify the crosslinking reaction and hence it was pointed out the advantage of its addition during the external gelation procedures. The use of a crosslinking modifier resulted in the production of a more uniform film without the appearance of localized gelling areas at the surface.
