  Grain hardness is arguably the single most important determinant of wheat grain quality and utilization and forms the basis of differentiating world trade of wheat grain. The present study was carried out to determine the texture of spring wheats using starch granule-associated friabilin, a 15kDa protein, as biochemical marker and their relationship with other hardness methods, chemical and quality parameter. Kernel texture estimated by near infrared reflectance (HNIR), pearling value (PV) and particle size index (PSI) ranged from 63.83-71.33, 63.00-84.88, and 16.33-29.33, respectively. Most of the spring wheat varieties fall in the category of medium hard possessing faint friabilin band. HNIR positively correlated with water absorption (r = 0.90) and zeleny value (r = 0.38), while negatively related with cookies spread factor (r = -0.58). Friabilin did not correlate with any quality parameter while relationship between other methods of hardness and quality parameters were observed.

  Cookies were prepared from commercially available straight grade flour using Retinyl acetate (RA) as fortificant @ 30, 40 and 50% of Recommended Daily Allowance (RDA). The product was packed in Bioriented poly propylene (BOPP) and analyzed on monthly basis for physico-chemical and sensory attributes including baking and storage stability of the fortificant up to three month. The results revealed the non-significant influence of fortification on physico-chemical composition and sensory characteristics and the cookies containing 50% of RDA; Retinyl acetate were found the best in overall acceptability. Baking loss of Retinyl acetate was 9.30% while 8.33% loss was observed during storage.

  The cardiovascular disorders are major cause of mortality in diabetic patients and myocardial necrosis, atherosclerosis and high blood pressure are major ailments in this regard. The core objective of the present research study was to explore the role of Black Cumin Seed Fixed Oil (BCFO) and Black Cumin Essential Oil (BCEO) on the markers of myocardial necrosis i.e. cardiac enzymes in normal and diabetic Sprague dawley rats. Diabetes mellitus was induced using streptozotocin @ 60 mg/Kg body weight. The three diets were prepared i.e. D1 (control), D2 (BCFO @ 4.0%) and D3 (BCEO @ 0.30%) and added separately in the diets and fed to the respective groups for a period of 56 days. The results indicated that diets were insignificant and level of cardiac enzymes remained in the safe ranges in normal rats. However, diabetes affected deleteriously and markers of myocardial necrosis increased in control group. In comparison, BCFO and BCEO normalized the levels of markers of myocardial necrosis. However, BCEO was more effective in reduced the elevated levels of these enzymes. Moreover, increased levels of transferases in diabetic rats were also reduced as a function of BCFO and BCEO treatment. In the nutshell, it can be assumed that black cumin essential oil is more effective in reducing the elevated levels of enzymes thus reducing the onset of cardiovascular disorders in diabetes mellitus.

  Increasing awareness regarding natural ingredients has led to utilization of functional beverages in diet based therapy. Present project was designed to evaluate safe use of functional drink prepared from green tea active ingredients. Efficacy trial was conducted in male Sprague Dawley rats for period of eight weeks. Functional drinks were prepared by adding catechins and Epigallocatechin Gallate (EGCG) @ 550 mg/500 mL and provided to rats for the period of eight weeks. Four types of studies were conducted consisting of different types of diets i.e. study I (normal diet), study II (high cholesterol diet), study III (high sucrose diet), study IV (high cholesterol+high sucrose diet). The results revealed safety of functional drinks as values for liver and kidney function tests and serum proteins remained in normal range. Organs to body weight ratio were non-significantly effected by functional drinks. Conclusively it can be suggested that functional drinks carrying green tea catechins and EGCG are safe and could be a part of diet therapy for treatments of lifestyle related disorders.

  In the current project, indigenously grown promising watermelon variety (Sugar baby) was characterized for its antioxidant potential. The watermelon juice and lycopene extract were quantified by HPLC that depicted 4.53±0.05 and 6.27±0.06 mg/100mL of lycopene, respectively. Furthermore, the watermelon juice and lycopene extract showed Total Phenolic Contents (TPC), beta-carotene assay, 2,2-diphenyl-1-picrylhydrazyl (DPPH) and Ferric Reducing Antioxidant Power (FRAP) as 23.63±1.09 and 97.15±5.01 mg/100g GAE, 49±3.10 and 73±3.20%, 29.11±1.91 and 57±3.22% and 21.67±1.21 and 37.60±1.12 mM FRAP/g, respectively. Consequently, the watermelon proved as a good source of antioxidant with special reference to lycopene.

  In present project locally grown black tea (Qi-men variety) was explored for its nutritional and antioxidant potential. Furthermore, polyphenols extraction was carried out by using water, ethanol and methanol as solvent at varying time conditions. Proximate profiling indicating moisture, crude fat, crude protein, crude fiber, ash and NFE as 7.01±0.20, 4.51±0.06, 15.12±0.51, 15.33±1.52, 4.86±0.08 and 53.17±1.97%, respectively. Likewise, tested sample exhibited good mineral status dominated by potassium and sodium. The different antioxidant indices were affected significantly by time and solvents. In this context, ethanol and 60 min extraction time showed maximum TPC, FRAP, DPPH and beta-carotene activity as 1150.92±15.01 and 833.33±1.12 mg/100g GAE, 754.44±12.30 and 609.89±16.04 μmolFe2+/g, 71.13±3.20 and 65.32±3.26 and 67.74±3.10 and 66.24±3.90%, respectively whilst minimum amount of these attributes were recorded in water extract and 30 min extraction time by 354.02±5.12 and 656.44±11.05 mg/100gGAE, 471.78±12.50 and 558.00±14.03 μmol Fe2+/g, 55.27±3.14 and 59.69±2.30 and 48.27±3.90 and 61.30±2.90%, correspondingly. Likewise, theaflavin, thearubigins, catechins and caffeine contents were detected highest in ethanolic extract 2.55±0.25, 20.93±1.10, 1.90±0.02 and 1.89±0.01% followed by methanol 2.05±0.25, 19.45±1.8, 1.68±0.03 and 1.72±0.06% and water extracts 1.23±0.25, 17.69±1.30, 1.52±0.04 and 1.54±0.03%, respectively. Among the time intervals, 60 min proved more efficient for the extraction of these bioactive moieties than that of 90 and 30 min. Conclusively, the tested black tea extracts holds promising antioxidant status thus prove as potential candidates against lifestyle related disorders.
