  This research aims to select and evaluate the performance of three high-ethanol-producing strains of Saccharomyces cerevisiae (TISTR 5048, TISTR 5339 and NP 01) in very high gravity (VHG) ethanol fermentation. The maximum specific growth rates (μmax) of TISTR 5048 and NP 01 grown in yeast extract malt extract broth containing 150 g glucose L-1 were 0.49 and 0.46 h, respectively while μmax of TISTR 5339 could not be determined due to cell flocculation. The ethanol production by TISTR 5048 and NP 01 was further carried out in batch mode at 30 °C under normal gravity fermentation (240 g glucose L-1) and VHG fermentation (280 and 320 g glucose L-1) and the initial cell concentration was 1x108 cells mL-1. The results showed that TISTR 5048 cultured in 240 and 280 g glucose L-1 gave the maximum ethanol concentration (P) with the value of 99.58 g L-1, while NP 01 cultured in 280 and 320 g glucose L-1 gave the maximum P with the value of 104.68 g L-1. Ethanol productivities (Qp) of NP 01 were slightly higher than those of TISTR 5048 at all conditions tested.

  The three best sellers of Thai rice wines, Sato, from the Northeast of Thailand were collected to analyze volatile composition of the products. The contents of principal volatile compounds were determined using gas chromatography-flame ionization detection. The results showed that there were at least 27 volatile compounds detected at various concentrations in the three samples. To achieve the identification of major would be impact odorants of Sato, the aroma index was calculated. From the 27 compounds identified, 10 compounds were determined to be the most powerful odorants (aroma index more than 1): acetaldehyde, ethyl acetate, ethyl butyrate, ethyl decanoate, 2-phenethyl acetate, isobutyl alcohol, isoamyl alcohol, 1-hexanol, isovaleic acid and caproic acid.

  Saccharomyces cerevisiae NP 01 was grown on sweet sorghum stem juice under normal gravity (NG, total sugar of 240 g L-1) and very high gravity (VHG, total sugar of 280 g L-1) conditions. The effects of initial cell concentrations (1x106, 1x107 and 1x108 cells mL-1) and nitrogen supplementation [0.5% (NH4)2SO4] on growth and ethanol production were investigated. The experiments were carried out at 30°C in a 2-L fermenter under an agitation rate of 100 rpm. Under both NG and VHG fermentations, the initial cell concentration of 1x108 cells mL-1 and sweet sorghum stem juice without nitrogen supplementation gave the maximum ethanol production efficiencies. The concentration, productivity and yield of ethanol were 105.12±1.34 g L-1, 2.92±0.04 g L-1 h-1 and 98.33±1.25% of theoretical yield, respectively at the fermentation time of 36 h under the NG condition. Under the VHG fermentation, the maximum ethanol concentration was not varied from that of the NG conditions, whereas the productivity and yield of ethanol were significantly lower than those of the NG conditions.
