  The aim of this study was to obtain lyophilized biomass from the Lactobacillus rhamnosus IL1, Lactobacillus rhamnosus IL4.2 strains based on their productivity (P). The optimum medium was chosen using Bioscreen C MBR and the EZExperiment soft. There were calculated the maximum growth speed, the doubling time and the cell productivity for each strain. There were tested various nitrogen sources and the relations between them. There resulted maximum productivity and exopolysaccharides synthesis in batch system, by using 10 g/liter of peptone, 4 g/liter of yeast extract for both strains. For Lactobacillus rhamnosus IL1 there resulted a productivity of 1.21 h-1xgxl-1 and 70 mg exopolysaccharides/liter and for Lactobacillus rhamnosus IL4.2 there resulted a productivity of 1.58 h-1xgxl-1 and 180 mg exopolysaccharides /liter.

  The aim of this work was focused on the obtaining of Pleurotus ostreatus mycelium (Pleurotus ostreatus M2191 and PQMZ91109) by submerged fermentation, in order to get freezedried biomass and extracts with high antioxidant and antimicrobial activities. The tests were performed at 25°C, in 300 ml Erlenmeyer flasks. The most effective carbon source and the optimum agitation speed were determined, in order to cultivate the two strains in a medium containing 2% malt extract and 2% peptone. For both strains the optimum agitation speed was established at 150 rpm. The most effective carbon source for Pleurotus ostreatus M2191 was glucose (15%) and, for Pleurotus ostreatus PQMZ91109, sucrose (10%). The obtained biomass was freeze-dried and was submitted to ethanol and pure methanol extraction. It resulted that Pleurotus ostreatus M2191 and PQMZ91109 strains had an antioxidant activity by 17% higher on average when ethanol was used as solvent, respectively by 53.43% for methanol. The phenols quantity for Pleurotus ostreatus M2191 strain was by 42.38% higher as compared to Pleurotus ostreatus PQMZ91109, for ethanol. In the case of reducing power, the results proved a similar trend for the two strains, the ethanol extracts being the most effective for M2191 and the methanol extracts, for PQMZ91109. The two Pleurotus species proved narrow antibacterial activity against Gram-negative and Gram-positive bacteria and two Candida strains tested.

  The biochemical characterization of the bacteriocine synthesized by Enterococcus faecium VL47 was realized, resulting a high thermal stability, resistance to acid pH, organic solvents and to the used enzymes. The production of antimicrobial peptides (bacteriocines) was used against three bacterial strains, Bacillus cereus CMGB 215, Listeria innocua CMGB 218, Escherichia coli CBAB2. The synthesis of bacteriocines was tested by using the MRS medium, thus, resulting an inhibiting effect against all three sensitive strains, even if the carbon source was replaced by lactose, sucrose, sorbitol, sorbose, arabinose, maltose, galactose and trehalose. The inhibiting effect of the precipitated bacteriocine was obtained when using a concentration of ammonium sulphate, with an average diameter of 1 cm against sensitive strains. To outline the effect of prebiotics on bacteriocine synthesis, MRS was supplemented by 1% inulin from Chichori, inulin from Dahlia, lactulose, raffinose, stachyose, xylose. It resulted that the maximum inhibiting effect was obtained when using lactulose, in a concentration of 1%.

  The purpose of the study was the identification of competitive substrate formulas to sustain Pleurotus eryngii cultivation, in Romania, in order to recover some cellulolytic wastes easy to procure in rural areas. The experiments conducted in a laboratory greenhouse followed the basidioma size, the productivity and the biological efficiency to use the substrate. Following the addition of rice breach and pumpkin seed husk in beech sawdust, were obtained the highest values, in average by one third higher as against the hay addition values. Although, it favored the fructification, it couldn't sustain a proper productivity that led to a scanty spawn maturation.
