Vitamin C Protects Against Monosodium Glutamate-induced Alterations in Oxidative Markers and ATPases Activities in Rat’s Brain

Abstract: Background and Objective: Monosodium glutamate (MSG) is a sodium salt of glutamate that is commonly used worldwide as flavor enhancer to increase food palatability. This study examined the efficacy of dietary vitamin C on MSG toxicity in the cortex and brain stem of rats. Materials and Methods: Rats were divided into 4 groups and MSG groups were fed with 150 g MSG kg1 rat’s diet while vitamin C was administered orally at a concentration of 200 mg kg1 b.wt., in 0.9% saline solution for 21 days. Results: MSG has no effect on the weights of body, total brain, brain regions and brain to body weight ratio. MSG significantly increased lipid peroxidation and GSH levels. Also, there were significant reductions in the activities of CAT, SOD (except in the brain stem), Na+/K+-ATPase and Ca2+-ATPase as well as reductions in the protein thiols level in the cortex and brain stem. There was no significant effect in total thiols level in the cortex but a significant reduction was observed in the brain stem. Vitamin C treatment reversed most of the alterations in the parameters analyzed in these brain regions. Conclusion: The study shows that MSG induced alterations in oxidative parameters and ATPase activities in the cortex and brain stem but vitamin C treatment is effective in ameliorating these alterations.
