Physico-chemical, Fatty Acids and Amino Acids Composition of the Seeds of African Grapes (Lannea microcarpa) Fruits

Abstract:
Background and Objective: African grapes (Lannea microcarpa) fruits are widely consumed in both rural and urban areas of Sokoto state, Nigeria. The research is carried out to evaluate the physicochemical, fatty acids and amino acids content of the seed oil and the seed kernel of Lannea microcarpa fruits. Materials and Methods: Standard modern methods of analysis were generally employed for the analyses. Results: The results of physicochemical properties of the oil extracts revealed the acid value (1.50±0.41) mg KOH g1, saponification value (192.54±3.8) mg KOH g1, peroxide value (1.57±0.11) mEq O2/k g1, iodine value (60.13±4.8)gI2 100 g, refractive index at 25°C (1.48±0.20) and specific gravity of 0.95±0.10 g cm3. The oil contains both saturated and unsaturated fatty acids of which stearic (11.35±1.20%) and palmitic (15.56±2.15%) are the predominant saturated acids, while oleic (44.36±3.23%), linoleic (14.27±1.17%) and arachidonic (12.45±2.76%) are the predominant unsaturated acids. The total essential and non-essential amino acids are 38.10/100 g protein and 39.24/100 g protein, respectively. Glutamic acid (14.63/100 g) and aspartic acid (9.34/100 g) are the predominant non-essential acids, while leucine (5.27/100 g) and isoleucine (3.46/100 g) are dominant essential amino acids. Conclusion: The results indicated the potentials of the seed kernel and the seed oil as food supplement and as an additional raw material in cosmetics industries.
